Cherry Mini Microwave Cakes

Gluten-Free/ No Refined Sugar / Small-Batch Healthy Dessert

These soft mini cakes are made with oat and flax flour, filled with juicy cherries, and topped with a light chocolate yogurt glaze.

They are warm, comforting, naturally sweet, and designed to fit a balanced lifestyle without feeling restrictive.

YOU’LL NEED
For the Mini Cakes
  • 3 tbsp oat flour
  • 1 tsp flaxseed flour
  • 1 egg
  • 2 tbsp plain Greek yogurt or kefir
  • 1/3 tsp baking powder
  • Sweetener to taste (stevia or erythritol)
  • 5–6 thawed cherries
  • Optional:
    • vanilla extract
    • cinnamon
    • 1 tsp rice flour for a softer texture
For the Chocolate Glaze
  • 1 tsp unsweetened cocoa powder
  • 1–1½ tbsp Greek yogurt
  • Sweetener to taste
  • 1–2 tsp warm milk or water
Optional Topping
  • extra cherries
  • mandarin slices
  • cinnamon
HOW TO PREPAR
Step 1 — Prepare the Batter

In a bowl, whisk together the egg, yogurt, and sweetener.
Add oat flour, flaxseed flour, and baking powder.
Mix until a thick batter forms.

Step 2 — Add the Cherries

Pat the cherries dry with a paper towel and gently press them into the batter.

Step 3 — Microwave

Divide the batter into small silicone molds or ramekins (about 2 inches / 5 cm wide).
Microwave for 2–3 minutes at 700–800W.

Do not overcook — the cakes continue setting for about 1 minute after heating.

Step 4 — Make the Chocolate Glaze

Mix cocoa powder, yogurt, and sweetener.
Add warm milk or water little by little until smooth and creamy.

Spread over the warm cakes.

SERVING SUGGESTION

Serve warm with:

  • fresh or thawed cherries
  • mandarin slices
  • hot coffee or tea
