Healthy Dried Mushroom Soup

Mushroom Soup with vegetablesYOU”LL NEED (2 servings)
30 g dried mushrooms (porcini or mixed forest mushrooms)
1 small carrot
1/2 onion
1 small potato (optional, for gentle satiety)
2–2.5 cups vegetable broth or water
1 tbsp olive oil
salt and pepper to taste
1 tbsp fresh dill or parsley (optional)

HOW TO PREPARE
Soak mushrooms
Rinse dried mushrooms and soak in warm water for 20–30 minutes.
Keep the soaking liquid — it adds deep natural flavor.
Prepare base
Finely chop onion, carrot, and potato.
Cook vegetables
In a pot, gently heat olive oil.
Add onion and cook for 2–3 minutes until soft (not fried).
Add carrot and potato, cook another 2–3 minutes.
Add mushrooms
Chop soaked mushrooms and add to the pot.
Add liquid
Pour in broth + strained mushroom soaking water.
Simmer for 15–20 minutes on low heat.
Finish
Add salt, pepper, and fresh herbs.
Let the soup rest for 5 minutes before serving.
