YOU’LL NEED
300–400 g chicken breast (cut into small pieces)
1 carrot
1/2 cup green peas
1/2 cup green beans
1 cup cauliflower florets
1 small onion
1/2 leek
1 medium potato
1 tsp olive oil
800 ml water
1 tsp chicken broth (or cube)
pinch thyme
pinch marjoram
pinch nutmeg
salt and pepper to taste
1/4 tsp nutmeg
small handful fresh dill
(optional) a small amount of horseradish for a more intense, warming taste
(optional) 1–2 tbsp cream (for softer taste)
HOW TO PREPARE
Chop onion and leek.
Heat olive oil and lightly sauté onion and leek.
Add water, chicken, potato, and cauliflower.
Bring to a boil and cook for 10 minutes.
Add carrot, peas, and green beans.
Season with herbs, salt, pepper, and nutmeg.
Cook for another 10–15 minutes until vegetables are soft.
Add dill and (optionally) a small amount of cream.
Stir gently and serve warm.
SERVING SUGGESTION
Serve as a light lunch or early dinner.
Can be paired with a small portion of whole-grain bread if needed.
